Attention, star product! These « menma » fermented bamboo strips are an essential ingredient in ramen (Japanese noodles served in a bowl of broth), to which they add umami and crunch.
In fact, it’s a seasoning made from dried, fermented bamboo shoots that are soaked in water, possibly in a broth, to soften them. The result is an original product with a perfectly balanced sweet and sour, subtly earthy flavor.
Remarkably, bamboo remains crisp even after cooking.
More common in Asia than in the West, bamboo is a plant with many virtues. It provides the body with fiber, copper and vitamins. Its sugar, called « tabashir », is good for the joints. Add to this the benefits of fermentation, and bamboo « menma » strips are a product to be consumed without moderation!
Usage:
These « menma » bamboo shoots are made to liven up ramen, but feel free to add them wherever you like: in salads, sandwiches, rice or stewed dishes, stir-fried vegetables… and why not in your morning cereal while we’re at it?
Storage:
In a plastic bag away from light, heat and moisture.
